Cookie Butter Ice Cream Cake

• 1 pack of Biscoff cookies
• 1 tub of cookie butter ice cream (I got mine at Trader Joe’s but you can also use vanilla ice cream instead)
• Biscoff cookies butter (to drizzle)
• Homemade whipped cream: mix 2 cups of heavy cream with 1/4 cup of powdered sugar and 1 tsp vanilla extract.

In an 8x8 dish (the dish I used is not 8x8, it’s actually an odd size 6x9 so an 8x8 will be fine) place a layer of Biscoff cookies. Cut the cookies if needed to cover all the area. Add a layer of ice cream on top. Warm up the cookie butter in the microwave so you can drizzle on top of ice cream. Repeat another round of layers. Make the whipped cream by mixing all ingredients in a mixer until fluffy and peaks form. Spread that on top and finish with cookie crumbs. Cover tightly with plastic wrap and aluminum foil on top and refrigerate for several hours even overnight. Enjoy!
